There are several out there that are pretty good, Mint comes mind. Heck you could even use a Raspberry Pi running Raspbian would work. I’ve also used thinstation on a half of dozen projects. Thinstation makes a pretty tight OS that will boot from a MB flash drive.
But you do have to know a bit more about linux than just using the UI. On one of the projects use used Thinstation running on a single core intel nuc. As a test we ran windows 7 on this box. It was almost usable, but not really.
